Ingredients:

  • 3 packets of unflavored gelatin
  • 1 cup cold water, divided
  • 1 1/2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • 1/4 cup cornstarch
  • Nonstick cooking spray or butter
  • Rainbow sprinkles

You’ll need two round cookie cutters of different sizes.

Instructions:

  1. Prepare the Gelatin
    In a large bowl, combine the gelatin with 1/2 cup of cold water. Let it sit for about 10 minutes to bloom.
  2. Make the Sugar Syrup
    In a medium saucepan, mix together the remaining 1/2 cup of water, granulated sugar, corn syrup, and salt. Set over medium-high heat and stir until the sugar is dissolved. Allow the mixture to come to a boil, then let it cook until it reaches 240°F (use a candy thermometer to check the temperature). Once it reaches the desired temperature, remove it from the heat.
  3. Mix and Whip
    Slowly pour the hot sugar syrup into the gelatin mixture while mixing on low speed (use a stand mixer or hand mixer). Once the mixture is combined, increase the speed to high and whip for about 10-12 minutes, or until the mixture becomes thick, glossy, and fluffy. Add the vanilla extract and whip for another 30 seconds.
  4. Prepare the Pan
    Spray a sheet pan or baking dish with nonstick cooking spray or lightly grease it with butter. In a small bowl, combine the powdered sugar and cornstarch. Sprinkle some of this mixture over the greased pan to prevent sticking, and save the rest for later use.
  5. Spread the Marshmallow
    Pour the marshmallow mixture into the prepared pan and spread it evenly with a spatula. Lightly spray the spatula with nonstick spray to help prevent sticking. Sprinkle rainbow sprinkles generously over the top of the marshmallow.
  6. Let Set
    Let the marshmallow set at room temperature, uncovered, for at least 4 hours or overnight, until firm.
  7. Cut Out Donuts
    Once the marshmallow is set, dust your work surface with some of the powdered sugar and cornstarch mixture. Carefully remove the marshmallow slab from the pan and place it on the dusted surface. Use the larger round cookie cutter to cut out donut shapes, and use the smaller round cutter to create the donut holes. Dust each marshmallow donut and hole with the powdered sugar and cornstarch mixture to prevent sticking.
  8. Serve and Enjoy
